In the mixer's bowl I stirred together 1 1/2 cups of whole wheat flour, 1 1/2 teaspoons of baking powder, 1/4 teaspoon of baking soda and 1/8 of a teaspoon of salt. Mixah mixah mixah.
I separated two egg whites from yolks and dropped them (the whiteys) in a separate mixing bowl and beat them just a little. Then I proceeded to mix in 1 cup of mashed bananas (about 2 whole bananas), 3/4 of a cup of white cane sugar, and 3 tablespoons of vegetable oil. To the side, I grated a lemon peel to yield enough zest for 1 teaspoon, then added that to the mix as well.

Then I preheated the oven to 350 degrees. I hate how in most recipes the first direction is to preheat the oven and it's always way way too early. I never do this too early because then the kitchen gets flaming hot and that's just BANANAS.
So once everything was blended together well, I lined a muffin pan with some baking cups and poured the batter into each cup about 2/3 full.

The muffins were pretty good, even Johanna liked them and she hates organic :p
